Chicken tacos and Guacamole

Chicken tacos
Makes 12
Ingredients
•  12 taco shells, warmed
•  180g guacamole (recipe below)
•  500g chicken, cooked and shredded
•  1 iceberg lettuce, shredded
•  135g tomatoes, finely diced
•  165g cheddar cheese, grated
Method
1. Spread one tablespoon of guacamole inside each taco, then add chicken, lettuce, tomatoes, and cheese.
2. Place all the tacos on a platter to serve.

 

Guacamole 
Ingredients 
•  2 avocados
•  Juice of 3 lemons
•  1 1/2 tbsp onion, finely chopped
•  1 large tomato, finely cubed
•  1/4 tsp salt
•  1 1/2 tbsp olive oil
Method
1. Cut avocados in half. Remove stones, scoop flesh into a small bowl, and mash with a fork.
2. Stir in lemon juice, onion, tomato, salt, and olive oil.
